Vegan Quinoa & Coconut Porridge

I can safely say that I am a girl who lives for breakfast! Gone are the days of running around in the morning, already late for work, with a piece of burnt toast in one hand and a cold cup of tea in the other.

My snowballing love for breakfast has led me to this amazing vegan porridge recipe which I have been tweaking and perfecting for the last few weeks. I finally feel ready to share it with you guys, so whether you’re vegan, vegetarian or someone who is just in search of something new and exciting to fill your tummy this Autumn, this animal friendly, protein packed, oatmeal alternative is for you!

Quinoa Porridge

Ingredients

Serves 2

  • 150ml Coconut cream
  • 200ml Water
  • 2 tbsp White Quinoa
  • 2 tbsp Millet
  • 4 tbsp Organic 5 Grain Porridge Oats
  • 2 tbsp Chia Seeds
  • 1 tsp Cinnamon

Method

Heat the coconut cream and water in a pan on the stove until the mixture begins to bubble gently.

Add the quinoa, millet and chia seeds to the liquid and cook for around 15 minutes.   I soak my quinoa and millet overnight in a bowl of water to speed up cooking time in the morning. Failing to do this will increase the cooking time by about 15-20 minutes (and I’m always far too hungry in the morning to wait that long!!)

When the millet is no longer crunchy, add the oats, and cinnamon and cook for a further 5-10 minutes. Add more water if necessary.

When the porridge is thoroughly cooked and is a creamy consistency, you’re ready to load up your breakfast with any topping of your choice.

Vegan Quinoa PorridgeSome of my favourite combinations include

Banana, blueberries and almonds

Apple, raisins and pecans

Strawberries, banana and shredded coconut

All cooking times and quantities are approximate so just find what works for you. You can also leave out the oats and just double the quantity of millet and quinoa in order to make this a gluten free option.

I usually make 2 portions at once to save time as this porridge can be stored in the fridge and reheated the following morning in just a few minutes!  You too can be free from a life of boring breakfast and mid-morning munchies!  Hooray!!
